TASTING NOTE:
Pascal Jolivet is one of the most dynamic in the Loire Valley - crafting elegant wines since 1987. The philosophy of the estate is to allow nature to take its course, as much as possible. The grape juice is fermented naturally, without adding cultivated yeasts in conjunction with thermoregulation. The fruit parcels from each unique site are fermented separately so as to allow the terroir to fully express their differences and subtleties.

Each parcel of grapes is vinified separately in stainless steel tanks, fermenting slowly to allow the natural yeasts to emphasize their character. Fermented at cool temperatures rather than cold and left on their lees for four to six months to achieve subtle but complex aromas.

This Sancerre is a composite of the three soil types in the district: calcareous clay, limestone, and flint. Les Caillottes makes up 50% of this classic Sancerre Blanc. Les Terres Blanches represents 30% and Silex representing 20% of the blend.

In the glass you have a pale straw coloured wine. On the nose subtle aromas of green herbs and mineral notes. On the palate a wine of style marked by richness, elegance and smoothness. This wine is powerful and presents a perfect balance of crisp green fruits and fresh herbal characters, along with expressing minerality and finishing crisp and dry. Chill and serve at 8-9C.

CELLARING POTENTIAL:
Drinking perfectly well this summer season; and through until early 2015.

SUGGESTED FOOD MATCHES:
Perfect wine pairing with trout, shellfish, seasoned Asian cuisine, and goats cheese, enjoy.
