Hayman's Old Tom Gin is the first of its kind on the market for many decades and is based on a nearly 2 century old recipe from the archives of the longest serving gin distilling family in the UK - The Hayman's. Old Tom Gin gave us so many classics and is a fantastic gin for mixing in cocktails. This is a more modern drink hailing from 'The Lounge Lover' and uses the beautiful and delicate flavours of fresh jasmine (which is available from most good fruit and vege suppliers).
Ingredients:
60ml Hayman's Old Tom Gin
30ml fresh Lime Juice
10ml Fennel Syrup (homemade)*
6 Jasmine Flowers
2 large chunks of peeled Cucumber
Crowned with ginger ale
Method:
Muddle jasmine flowers with cucumber in a mixing glass. Add remaining ingredients except ginger-ale, fill with ice and shake well. Rinse a highball glass with Absinthe and fill with ice. Strain into highball glass and crown with ginger ale.
*Note:
Lightly sweet fresh fennel bulbs in a pot over a low heat and then add 2 litres of boiling water. Bring to the boil for 1 minute then leave to cool (infuse) for 30 min. Strain and bring back to the heat adding an equal quantity of white sugar. Bring to boil again and reduce until desired consistency reached.
