I discovered this little beauty recently in Barbados. It is their National Cocktail, well it must be... I have to say every place and most people have their own highly secret recipe. It has quickly become my favourite drink. Easy to make and even easier to drink.
It works magically with the delicious flavours of vanilla, orange, mocha and dry spices found in the legendary rum that is Mount Gay Eclipse. I would highly recommend it poolside or beachside in the height of the oncoming summer - YES! The base can be easily made in bulk so it's perfect for larger gatherings. Taste one today and toast to the Caribbean.
INGREDIENTS:
45 ml Mount Gay Eclipse Gold Rum
20 ml Fresh Lime Juice
15 ml Sugar Syrup
1 tsp of Angostura Bitters
Sparkling Mineral Water
Fresh cracked nutmeg
METHOD:
Build in a tall glass over ice and stir well.
GARNISH:
Garnish with an orange slice and a cherry.
