TASTING NOTE:
This wine is another perfect example - that good wines are made in the vineyard, as the attention to detail for every aspect of the growing season has been meticulously cared for by the team at Fairhall Downs and the results are clearly evident in every bottle.
In 2008 - the team at Fairhall Downs started hand picking their Sauvignon Blanc on April 4th. The single vineyard fruit went into this barrel fermented Sauvignon Blanc 'Hugo' which has been very well received by all wine enthusiasts in restaurants and at home since its first vintage in 2007. All of the fruit was hand harvested, then whole cluster pressed and barrel fermented with indigenous yeast in French oak barriques for 10 months.
In the glass the wine is clear and bright. The bouquet has peach and nectarine characters balanced with spicy notes from the time in oak. On the palate you have a rich wine of good depth and complex tones from time on lees and the natural ferment. Serving temperature: approx 8-10C.
CELLARING POTENTIAL:
Drinking perfectly well this coming summer; and well into 2010.

Perfect wine match with seafood with butter sauce, chicken pasta, cheeses such as emmental, gruyere, enjoy.
This wine has so much personality, you have to share a bottle with friends.
